Harvest time rooster is an age old recipe which comes from the flatlands around Alessandria. Should a rooster not be available, it can be replaced with a free - range hen. In the chicken coop, if the male proliferates, many are killed so as to restore a harmonic balance with the productive hens. This has also given rise to a popular saying in the local dialect. The word “harvest time” which is used in many other local recipes brings to mind when many people worked closely together over an intensive period. Time was at a premium and not to be wasted at the table. This dish was brought to the harvesters who ate it in the fields without returning to the farmhouse. It is best eaten at room temperature on the day subsequent to its preparation.
