Luigi Visconti has dedicated 5 of his 15 hectares to the hunchback cardoon. He sells them preserved in oil and sweet and sour or transformed into an extraordinary chutney to eat with mature cheese. The remaining land is reserved for seasonal vegetables from which to obtain bottled vegetables, side orders of mixed vegetables, bagna caoda, the traditional chilli peppers stuffed with anchovies and capers or tuna, delicious sauces such as the Boscaiolo, with porcini mushrooms and chestnuts, and the new Barbera grape chutney.
