Rosanna Cancellara Tomasi raises goats, Giant Pied, Burgundy Fawn, and Vienna Blue rabbits, chickens, hens, American hens, guinea fowl, ducks, local turkeys, and quail. But the delicacies branded "Le delizie di Rosanna," produced organically, are the jewel in the crown. The Nizza cardoon mustard stands out, along with the appetizer "el gob ed Nisa en bagna caoda," stuffed chili peppers in oil, peppers in bagna caoda alla Sclarea (an original sage sauce), products made with antique roses, lemon balm sauce, Damascene plum jam with violets, and jams paired with aromatic herbs, such as pumpkin with lemon verbena. There are also rarities such as the Spadone cardoon, and numerous types of ancient and aromatic herbs for infusions and herbal teas.
