VALMIS: A NOBLE DISH FROM THE CASALESE AREA

In the province of Alessandria, the lack of royal courts, noble families, and great houses profoundly affects the history of its cuisine. The only partially exception is Casale Monferrato, where the presence of the Gonzaga family in the 16th century left some faint gastronomic traces (see, for example, the spread of the torta mantovana).

An interesting and ancient noble cuisine recipe from Casale is called "valmis": a term used in the Renaissance to indicate prestigious mixed game dishes served in full view. Gastronomer Giovanni Goria hypothesizes the Gonzaga origins of this dish.

This dish requires care in its preparation, but it is not difficult and will be delicious and worthy of the most elegant tables (especially if during hunting season, pheasant and partridge are used instead of guinea fowl and quail).
