Flatbread Novi style
The name focaccia is derived from the classic Latin word focacius, so from focus, hearth, hearth-baked. Focaccia has ancient origins, there are innumerable recipes and it is impossible to trace its exact origin.
Novi Focaccia, similar to Genoese Focaccia, is widespread all over the Apennines. Besides Novi Ligure where guidelines have been laid down for production methods, it is well known across the province of Alessandria.
